I can't believe summer is here. I feel like I just got past Christmas!

Well, with summer comes a little less stress hopefully and an abundance of activities to explore. Being outdoors is key as the weather lends itself to adventures and relaxation.

To accompany your summertime pursuits, I am passing along some delicious and healthy alternatives to your usual summer food cheats.

It is my mission to help you get well, stay well and prevent/manage illness and pain. I will tell you from first hand experience that you can have all the money in the world and it still will not buy your health back.

It is important that you take positive steps every day to insure you are caring for the one body you have been blessed to receive.

Health is not about being perfect, its about setting your mind to live in a way that manifests wellness instead of disease. You will slip up and that's  okay because you are human, just pick yourself back up and begin again.......If you keep choosing to Rise Up Well as best you can everyday, you can't loose.

Maca Chiller Smoothie

This frothy smoothie combo with macadamia nuts‚ almond butter‚ vanilla‚ lucuma & maca is an office favorite.

2 tsp Navitas Organics Raw Maca Powder
1 Tbsp Navitas Organics Lucuma Powder
1 tsp Vanilla
1 Tbsp Macadamia Nuts (about 5)
2 Cup Almond Milk
2 Cup Almond Milk (pre-frozen into cubes)
1 Cup frozen Banana
1/2 Cup Almond Butter
1/2 tsp Cinnamon

Blend ingredients and enjoy.

Strawberry Milkshake

This rich‚ deluxe strawberry shake offers more than just a classic flavor: it contains a wealth of metabolism boosting benefits from green coffee powder’s phytochemical content‚ in addition to the satiating power of insoluble fiber and healthy fats.

¾ cup Frozen Strawberries
½ cup Ice
3 Tbsp Navitas Organics Cashews
1 Tbsp Navitas Organics Coconut Water Powder
¾ cup Water
1 tsp Vanilla Extract
Pinch Sea Salt
1 Medjool Date? pitted
1 tsp Navitas Organics Green Coffee Powder

Combine all the ingredients in a blender, and blend until smooth and frosty.

Blueberry Oat Smoothie

This smoothie makes the perfect breakfast - it is creamy‚ yet light‚ and packed with 11 grams of healthy fiber per serving for long lasting energy.

½ cup Navitas Organics Mulberries
2 Tbsp Navitas Organics Flax Seed Sprouted Powder
1 Cup Ice
2 Cups frozen Blueberries
¼ Cup Rolled Oats
1 tsp Vanilla Extract
2 Cup Almond Milk

Blend and enjoy.

Seven Layer Superfood Dip

With layers of beans, sweet potatoes, kale, guac, salsa, superfood seeds, and fresh vegetables and herbs, there has never been a healthier way to enjoy the comforts of a layer dip! You can make the components separately ahead of time – each quite simple – and combine right before serving.

For the Beans:
1 15-ounce can Black Beans, drained
½ tsp Onion Powder
¼ tsp Garlic Powder
¼ tsp Sea Salt
1 Tbsp Olive Oil

For the Sweet Potato Puree:
2/3 cup Navitas Organics Cashews, soaked for 2 hours in water and drained
2 cups Sweet Potato Puree (or 1 15-ounce can)
2 Tbsp fresh Lime Juice
½ tsp Sea Salt
¼ tsp Cayenne Pepper

For the Kale:
1 Tbsp Olive Oil
½ large Yellow Onion, finely diced
1 large bunch Latigo Kale, stemmed and finely chopped
Sea Salt and Ground Black Pepper to taste

For the Guacamole:
2 large Hass Avocados, pitted, peeled, and chopped
¼ tsp Onion Powder
½ tsp Navitas Organics Wheatgrass Powder (optional)
1 Tbps fresh Lime Juice
Shot of your favorite hot sauce

For the Topping:
2/3 cup Pico De Gayo
2 Tbsp Navitas Organics Hemp Seeds
1 Tbps Navitas Organics Chia Seeds
1 Green Onion, thinly sliced
1 Radish, thinly sliced
Handful Cilantro Leaves

Make the beans: To a food processor, combine the beans, onion powder, garlic powder, salt, and olive oil. Puree until mostly smooth. Transfer to a large serving bowl – preferably transparent to showcase all the different layers – and smooth out into a flat layer.

Make the sweet potato puree: To a food processor, add the soaked Cashews, sweet potato puree, lime juice, salt, and cayenne. Process until smooth. Carefully spread the puree on top of the bean layer, smoothing out the top.

Make the kale: Warm the olive oil in a large saute pan over medium heat. Add the onion and suate for 5-6 minutes, until translucent and slightly caramelized. Add the kale and sprinkle generously with salt and pepper. Continue to cook for 2-3 minutes longer, stirring constantly, until the kale is completely wilted. Remove from heat and adjust salt and pepper as needed. Let cool to room temperature, then layer on top of the sweet potato puree.

Make the guacamole: To a food processor, combine the avocados, onion powder, Wheatgrass, lime juice, a shot or two of your favorite hot sauce, and salt. Process into a chunky mixture. Taste for seasoning and adjust as desired. Carefully spread on top of the kale.

Finish with the toppings: Layer the pico de gayo on top of the guacamole. Sprinkle with the seeds and green onion, and garnish with radish slices and cilantro. Serve with chips at room temperature, and refrigerate leftovers.

 
Toasted Coconut Cacao Avocado Mousse

One bite and you won’t be able to resist this silky smooth chocolatey magic.

1 ripe avocado, pitted and peeled
3 tbsp Navitas Organics Cacao Powder
3 grams collagen
1/4 cup unsweetened coconut milk
1 tbsp maple syrup or honey
1/2 tsp vanilla extract
toasted coconut, to garnish

Add all ingredients except for the sweetener and toasted coconut to a food processor. Puree until completely smooth, using a spatula to occasionally scrape down the walls of the jug.

Sweeten to taste: Add 1 tbsp maple syrup or honey, then puree and taste. Drizzle in a bit more as needed. Depending on the size of your avocado, you may want to add another splash of coconut milk before processing again. Note that a slightly longer processing time will help give the mousse a lighter, whipped texture.

Divide the mousse between two small bowls or cups and garnish with toasted coconut.

*A note on sweetener: If you want, you can swap in a powdered natural sweetener to taste. However, the honey and maple syrup help to add moisture, so if using powdered sweetener, add an extra 1-2 tbsp coconut milk.

Crème de Minte Cacao Smoothie

The 'créme' comes from the creamy Cashews, while the fresh peppermint and raw Cacao will knock your socks off! With this blend, you get the bonus of the greens hidden in a chocolately disguise. 

3 Tbsp Navitas Organics Cacao Powder
3 tsp Navitas Organics Cacao Nibs
1 Tbsp Navitas Organics Coconut Palm Sugar
½ Cup Navitas Organics Cashew Whole Nuts
1 frozen Banana (cut into chunks)
½ Cup Mint
1 Cup Spinach
1 Cup fresh Kale
1 Milk of choice (Almond or Rice recommended)

Blend and enjoy!

 
Green Energy Bars

Green energy is not just sustainable‚ it’s nutritious and delicious! You’ll be surprised at how yummy these snack bars are.

¼ Cup Navitas Organics Hemp Seeds
2 tsp Navitas Organics Wheatgrass Powder
1 Cup Navitas Organics Cashew Whole Nuts
1 Cup pitted Medjool Dates (about 8 large Dates)

Mix the cashews‚ dates and wheatgrass powder together in a food processor just until a rough dough has formed (allowing some cashews to remain coarsely chopped). Add the hemp seeds and pulse several times until combined.

Place a sheet of saran wrap on a cutting board and spill the dough out on top. Use your hands to press and form into a 1 inch thick rectangle‚ then cut into 8 pieces.

Wrap and keep in the freezer for long term storage.

Adding in ¼ Cup of Navitas Organics Goji Berries is another excellent addition.

The Navitas Pomegarita

This fruity margarita recipe is perfect for a hot summer day. The Navitas Pomegarita can also be made into a happy hour cocktail by adding tequila. The camu berry powder in the Margarita provides a full daily serving of Vitamin C. The sweet-tart punch of the antioxidant-rich pomegranate powder makes this vegan and gluten-free recipe extra special.

½ tsp Navitas Organics Camu Powder
½ tsp Ginger Powder
1 Cup Navitas Organics Coconut Palm Sugar (+ 1 Tbsp.)
1 Cup fresh-squeezed Lime Juice (+ 1 Tbsp.)
¼ tsp Sea Salt
4 Tbsp Navitas Organics Pomegranate Powder
3 Cup Water
3 Cup frozen Strawberries

In a blender‚ mix all the ingredients together until smooth. For a frostier drink‚ add ice and blend again (or just serve "on the rocks"). Add alcohol if desired‚ or serve virgin.
